2 Chicken Breasts (Organic)
1 Onion (Diced)
2 Red Peppers (Diced)
1 Courgette (Sliced)
1 handful spinach (or use frozen)
1 tbsp Worcester Sauce
1 tbsp Coconut Oil
1. Using coconut oil, fry the onion, red pepper and courgettes (5-8min) – Set aside
2. Then fry the chicken on a medium heat with the worcester sauce until brown.
3. Mix the eggs in a large bowl, add the spinach and rest of the ingredients
4. Pour the mix into a round baking dish and bake on 180deg for 15-20min.
