2 Eggs, 2 Egg Whites
2 Tbsp Sliced Onion
2 Tbsp Sliced mushroom
2 Tbsp Sliced tomato
2 Tbsp Spinach
2 Tbsp Peppers
Salt & Pepper or Spice of Choice
Teaspoon of coconut Oil in Pan. Crack eggs into a small mixing bowl.
Chop vegetables, and add all vegetables to eggs mixture, plus salt and pepper to taste. Add egg mixture to pan.
Cover pan and cook on medium-high heat 3-4 minutes, flipping once. Serve warm
