Omega 3 Carrot & Walnut Salad

500g Organic Carrots
2 Sticks Celery chopped
Bunch watercress
1 small onion sliced thinly
Large handful walnuts
Large handful sultanas
3 Tbsp coriander chopped

2 tbsp lemon juice
1 orange (juice and grated rind)
3 Tbsp Olive oil
20g Walnuts
Black Pepper
1 Garlic clove

Wash the veg and leave to drain.
Dressing: Put the rind, lemon, orange juice, oil, garlic, & walnuts into a processor. Whiz till smooth.

Put the celery, onion, carrots and cress into a large bowl. Gently mix together. Add the dressing. Then add sultanas & walnuts. Mix well and decorate with coriander on top.
