Paleo Brownie Muffin

350g Sweet potato cooked, peeled
5 eggs
1/3 cup honey
1 tsp vanilla extract
1/3 coconut oil melted
1/2 cup of raw cacao powder
1/2 cup coconut flour
1 tsp cinnamon
1/2 cup roughly chopped macadamia
1/3 cup dried cranberries (optional)

Frosting
100g pitted dates (soak in boiling hot water for 10min)
1 avocado
1 tsp vanilla extract
Splash of coconut milk
2 tsp honey
2 tsp cacao powder

Turn over on 180deg – Use muffin trays or low lying dish

– In the food processor combine the sweet potato and eggs, mix till blended.
– Add honey, melted coconut oil, vanilla extract and mix. Sift the cacoa, coconut flour and cinnamon into the mixture and mix.
– Add the nuts and cranberries
– Pour the mix into the muffin tray or tray

Place in the oven for 20min

Frosting:
– Drain the dates and place in food processor, add the avocado and blend till smooth.
– Add the vanilla extract, coconut milk, honey and mix
– Add the cacoa then mix till blended
– Add to the top of muffins and WHHAAA LAAA!!! SUPER YUMMY Paleo Brownie Muffin!!
